How do I when relocating my main castle, tell the game where to relocate ?

Go into the King's Market, then select to relocate your main castle. On the map there will be red outlines of castles where you can select to place down your main castle.
If you can't see any of the red outlines, it means that your area is probably too crowded and that all the spaces are already taken. Just search the map a bit more and you should be able to find some.
