How are the leagues set up? I am a level 41 and have been in leagues where most of the other people are level 70. How am I supposed to compete with level 70 legendary level 800? Against the Samurai the other 8 people in my league were all level 70's with 2 of them being legendary level 800. Hardly seems fair to me.

Search it up some more.  There are several places this is explained.

In a nut shell:  The ONLY time your level and might points are taken into consideration is the FIRST grouping.  After that, it is your Kingdom Title and medal count.  You should notice that all those level 70s have the same Kingdom Title and very similar medals as you.

They may have the same amount of medals but theirs are gold. I haven't got a single medal above bronze since the first grouping. They can score the same amount from one attack as I do attacking all day. I can't get the good prizes because of that.

Yes, this late in the League if you are matched high, you will have difficulty.  Typically at this point, you should be fairly properly sorted out.  I forget when people can enter KL.  Were you in this one from the beginning?  

What many lower level players do, to help sort things out, is try to NOT place high the first event or two.  This seems to place you into a lower tier and helps keep things a bit more in line with reality.

However, this type of bracketing does have it's flaws, and if you do too well you will end up with bigger opponents who are not working nearly as hard as you.  Again, with it being a "Results Based Ranking System" it won't care what level you are when placing you into the next group.  If you earn the rank of say "Warrior", you will be grouped with other "Warriors" of similar metal counts.  And ALL the metals count.  You could have a ton of lower level metals to get you there and they could have fewer but high level ones.  You would have worked WAY harder to get there.  But, the counts are the same, so you are in the same group.  You may notice that some of them only play one day, and others not at all.  But, in that one day, they can get 10x your score in the 3 - 5 day event.  

Don't worry, in the future you can be lazy and dominate the lower levels if you want to as well...….
