I've completed/maxed the wall/moat/gate and built a level 6 tower but unfortunately can't seem to unlock the Barrel Roll, Bee Preserve and
Nordic Spirit.

Clearly I'm missing something, any thoughts gratefully received!!

Try the research tower, advanced section to unlock the relevant upgrades
