Should I SELL all my Unique, Legendary etc equipment, Commanders/Castellans and keep RELIC equipment, Commanders/Castellans only?

Be selective.

There ARE things that you can make with the non-relic that you just may like.............

I sold all of mine apart from my commanders that have 90 ranged, 80 speed, 75% fire damage and 8% chance to destroy buildings.

you didn't keep any fire casts? i know that relic buildings don't burn but the granaries are still a decent source of food

put it like this - why save a BD commander if you don't think a fire cast has any value?
