i've played this kind of game before, namely travian.
in that game we have catapults, rams that destroy the walls and buildings permanently.
but in this game, it looks like there is no catapults here and rams don't permanently damage the walls but simply removes them on the attack itself only.
although i saw that spies can sabotage the buildings... so is sabotaging the only way to destroy a player?
and in the case of an alliance war, how do you coordinate to destroy another alliance and destroy them?

There is no possible way to actually burning a player until the castle actually is in ruins or destroyed, and sabotage can only burn buildings the same as when you attack another castle and win, and in case of an alliance war, you must coordinate the attacks yourselves, the attacks cannot join together to be a super powerful attack, but with some coordination you can make them strike almost at the same time

yes i am aware that you can make troops join other troops, just like if you produce troops in this village and you produced troops from your outposts, they can't be joined.
ah so the only way to destroy a player basically is attack and attack and sabotage him constantly. i see thanks a lot... but how do burnings work? and i saw how sabotage can inflict on buildings, but how much do attacks inflict/burn the buildings?
and you mentioned you can coordinate the attacks but i see no clock on the game, do you happen to know where i can find the time, without time being shown clearly, it is nearly impossible to coordinate an attack. thanks

And you can Join your own troops into a castle/outpost/village of your own and send them in a single attack, i mean join troops from different attacks is what cannot be done
and, Well my friend, the system of Burned buildings after you win an attack depends on how many soldiers survive the battle, more of them more burned buildings the opponent will have, if for example you are attacking someone and he have a little amount of buildings, like a new outpost for example with low level buildings they will be greatly damaged, but i think the buildings that are set on fire is completely random and also the damage they get is also random especially when you have a lot of buildings/towers, also ruby buildings cannot be burned and to the alliance question, there isnt any clock, you will have to talk to your alliance that is the only way

but just one clarification on how how burning works... if a building is on burning, does the building malfunction, or if it's left burning for a period of time they dissapear or get destroyed and etc...?

yes it does malfunction
In the case of the Plants (farms/Quarries/Woodcutters) their productivity is reduced
In case of Dwellings their population is reduced therefore you get less coins
In case of a barracks/workshop, the speed of recruitment and production is decreased
and I dont think there are other side effects with other buildings, of course every building on fire decreases Public order in 10 points

Had a question about the burning buildings. Say you have been fighting someone and all their buildings are burning in an out post will that affect the public order in the main castle. And can you over take someones outpost?? Thanks

No, the PO of each castle in apart from others so no, that will only affects the targeted Outpost

You can't destroy a player in this game. The only way a castle can be destroyed is if the player leaves the game and turns to ruins.

I'm relatively new to the game so my question is... Who does the sabotaging? Is it a different character from the SPY or is it an additional option for the SPY like (1) military espionage, (2) economic espionage, then (3) sabotage?

The sabotage's aim is to:
a) Gain you one achievement worth just 30 points
b) Unnecessarily cause pain and suffering to players because, apparently, most of the players in this game enjoy watching other players having to put out fires even when it puts themselves at a disadvantage
It is an additional feature of the spy, to answer your first question. Maybe the spy has been drinking too much in the tavern and forgot that sabotage is a waste of their time.
