May main question is:
Can I deploy spies to player castles without losing my protection status?
If anyone can offer other tips on what I can and can not do in Protection mode, I would appreciate that information also.

I believe the only thing you can't do in protection mode is attack real players, though sabotage may be another no-no, not sure about that. I know for a fact though that you can send spies to get espionage, attack robber baron castles, etc. while still in protection mode. If you're about to do something that would end your protection, you should get a notice and a "are you sure want to do this?", so I wouldn't worry about accidently ending it.
