Can I demolish my outpost, so I can get one of those back, that can create/steal an outpost?

You can abandon your outpost. Go to the outpost that you want to abandon. Go to Economy -> Management. Click on "Surrender outpost?". [There is a probably a confirmation question - something like "Are you sure?", but I haven't clicked on the button so I don't know.] Wait 24 hours (I suggest that during this time you demolish buildings and transport resources and troops from the outpost to another outpost or your main castle). You can then get another outpost.
Please note that once you abandon the outpost, there is no way to get it back. The outpost will revert to how it was originally - a castle empty apart from a level 1 keep.
