espionage is either military or economic (economic not available for robber baron castles).
military espionage enables you to find out the compostion of an enemy's troops. depended upon the accuracy, it will give you a general or very specific idea of the troops in the other castle, helping you if you want to attack that person. it will give you idea of what you would need to send to win the battle.
economic espionage tells you the reasources that are in the other castle, that you could possibly plunder when you attack.
