It's really your call sdk. Not an easy question to answer. It really depends whether you want to play an offensive game, defensive game or a bit of both.
If you're really active it's easier to have a larger offensive army as you can move them around to keep them out of harms way but if you're fairly inactive I would suggest a defensive strategy, otherwise you could lose all your attackers if someone catches them in your castle when they attack.
This game's all about balance and you should try to balance your soldiers too. Enough attackers to beat your enemies and enough defenders to protect your castles.

You can do different strategies like Baldrik said, I started the game been all about offense, I was attacking everything around me, but I got attacked back and realised that defense is important.
I would argue it is best to always have more defense then offense.
A good mix is important though you need attacking and you need defense, the more you play the game, the more you will learn which numbers are best to have

I had the same problem as Luke, but I would suggest more defensive troops at your main castle, and more offensive troops at your outposts. Most people who are attacking for loot or glory attack your main castle, so it's better to have it more on the defensive side. For your outposts you should worry as much, but still have some defensive troops there.
