if you arent level 30 or more I recommend robber barons and side quests (the ruby ones- not the XP ones)

In addition to barbarian fortresses, desert fortresses and dragon fortresses are also a great way to earn rubies - and coins.

Although barbarian fortresses are the easiest and most profitable and you'll lose a lot less soldiers

You can still profit from the others (otherwise they wouldn't have even been created) and there's no reason why you can't attack all 3 at once, if you have a big enough army in each world.

A couple of hundred with barbarian fortresses. You can win with less, but you want as little troops to die as possible.

for barbarian fortresses, i attack with between 135 and 150 troops of which about 100 die. I also cancel out the tools with suicide waves or my own tools. the ratio of my troops is 2/3 melee and 1/3 ranged

The fortress that gives more for less losses is the barbarian fortress, but the dragon gives normally around 3 times more coins

The ruby quests are the ones which have the ruby symbol (and a number next to it) as a listed reward.
FYI, Aaa343, there are many XP quests which also award rubies. For instance, the ones for joining Everwinter Glacier and the Burning Sands, the ones for attacking NPC other kingdom towers (even barbarian towers when you're under level 41), the ones for donating in any kingdom (even Everwinter Glacier if you're under level 41) etc.

I know about those, but those are only a few of them and in my personal experience, i have never been able to do more than a few of those quests, and therefore did not get many rubies do the desert quests stop giving XP at some point?

Nope. EDIT: This is a response to your question about the desert quests.
It's still wrong - just say "some quests". In addition, some non-XP quests don't give rubies - the ones in Everwinter Glacier that don't give rubies, when you're above level 41.
