Can we set the composition of soldiers while defending? I mean if i am the defender and just a few minutes before the attack, i saw only melee attackers coming in the left flank, say two handed sword. They can be well countered using ranged defenders and can i set those specific units only in that flank?

Yes, in the defense menu there's a crossed logo that shows a blade and some arrows next to the deployment percentage. It's just above where the tool slots are. Click on this and you can adjust the ratio of melee/ranged defenders.
