Food villages increase your food production by 50%, the others increase your stone or wood production by 35%.

You forgot to mention, that only happen in the Everwinter Glacier Kingdom, in the Burning Sands and the fire peaks the Villages worth 30% the food ones, and 25% the resource ones, apart from that, the men in the Villages to consume food from your main castle, and yes they worth defend it, In the other kingdoms you don't produce a lot of resources.

So Bob,

Can you tell me the point in owning a resource village? Though I know that I'll probably have my castle leveled, I just captured two of them (one wood and one food). Both were taken from players who had far more than 15. The problem now is that I see no use for them. Yeah, I am assuming that they will provide resources, but how much? I can send troops and tools, but how do I know if it is even worth defending? Also, do the soldiers at a resource village not eat? Am I not required to feed them? Thanks.

They add to production. In a way, they are like more flour mills. You don't have to do anything to get the extra production - it's automatically added. However, I would recommend defending them, especially after you have just taken them over.

The soldiers at the resource village consume as normal from food at the main castle.

Yes you can spy on the resource villages to determine what defense they have stationed there.

No it is not like an outpost because you cannot build in it, like your castle.

The resource village dependent on what the resource village is food, wood, stone, helps increase the attributes of the castle in the relevant world.

That is marked in the world map icon of the Village, its like the outposts, If the villages have trees in the icon it gives wood, if have stone, it grant a stone bonus, etc

Is there a limit to the number of resource villages one can have in Burning Sands, in the manner ther is is Everwinter? Also, any idea when the new RV's are placed on the board. It seems that every day I sign on there have been RV's added and every day the big guys have already swooped them up.

The limit for the Villages in the Burning Sands and Fire Peaks is 30 Villages, 10 of each type, and they give 30% of extra production in food, or 20% in wood/stone depending of the type of villages you have.

The Villages usually spawn when new players spawn (sometimes) ;)
You have to be quick if you see new ones, many players will always try to get them
