What is meaning of (1) Mellee or Ranged combat attack power
(2) Strength in defense against Melee or Ranged solders

1. The "Melee" or "Ranged" combat attack power, determines the amount of power the soldier have when is attacking and the "type" of attack it have, (melee or ranged)
A veteran Maceman have for example 118 of melee combat attack power, that means he have a melee attack of 118 of power, this only applies when attacking

2. Strength in defense against Melee or ranged is exactly the same as above, but those stats applies when the soldier is defending, the defense against "melee" is the power the soldier have to defend against melee attacks, and the "ranged" one is the power the soldier have to defend against ranged attacks

I have barrack level 3, so Soldiers limit up to archers, is that mean the best soldiers to defense my castle are now archers. and best attackers are crossbowman.

Archers are good for defense both melee & ranged. Yes crossbowmen are good attackers as long as the castle defenders are not bowmen or archers.
