I'm playing at the nordic server with players from other nordic countries and the game UI is in my native language. I would like to change the language to english, but it doesn't seem possible.
This is annoying because when you try to communicate something and describing in-game elements I would have to translate back into english and as words are interpreted and translated different ways, it doesn't always relate to the translation players in other countries have. Also, a lot of the translations are poorly done, probably with Google translation or some other automatic translator, and doesn't always make sense.
Is there any reason for not leting everyone have option to use the game in english?

This is only a guess but I think the language is set server by server. So it may be quite difficult to change an individual player.
Just a guess though.

well, it matters. If u play in skn 1, u cant change the language.
If u play in any of the internationals, u can.

I can't find any option to change language on any of the other servers.

I was afraid of that. But this must be an artificial limitation? I'm guessing the game isn't originally written in scandinavian language?

How?
If you logout, and go back to logininfo, what does the flag means, can you give a different language there?

The flag selects servers that use that language. If you select English, skn1 wont be included in the list.
I did notice that if you select Norge you get the option to sign into international 1 or 2, so I think they must have an option for those servers.
I tried it out and I logged into International 1 using Norge as the language and it worked, sorry for my earlier information on this.
It seems that only the International 1 and 2 servers have this option. Might be an idea to ask support if this can be an option for other servers too.

Does anyone know how can I login on a Polish server, when being in England?
When I'm playing from home, it opens a Polish server automaitcally (I guess my PC settings), but when I open the game at work or on my phone it automatically leads to an English server, although I would like login in to the Polish one.
Is there anyway I could login into my Polish account from an English PC?

Yes, you need to hit the flag button at the log in screen. There's a menu of flags, just select the Polish flag, then Polska1.
You may need to log out of the UK1 server first, use the log out button at the top right of the game screen.
Good luck.
