depends if you have bakery, public order etc... may around total betwen 150-200 without bakerys

I have a level 3 bakery, flour mill level 3 and 4 level 9 farms, and rubies for a level 4 bakery. Hell yeah!

What about if its only helbardiers/longbowmen, and at level 37 ill buy the research tower to research the veteran men and replace them with the current helbardiers/longbowmen i have right now.

In my castle yes, and look, i have a good public order, and 5/5 food investigation... but with a bakery level 4 you could have much more.

you should build more farms. ideal number is 10.I have a level 3 bakery, flour mill level 3 and 4 level 9 farms, and rubies for a level 4 bakery. Hell yeah!

Right now i only have 4 farms, i will only build as many resource buildings as the quests tell me to for the time being.

There is absolutely no limit onto the number of troops you can have, as long as you can feed them. I have been in negative production by 1000 and other players have reported more than that.
There is no actual limit on food production either, but I would estimate that 3000 is fairly high for a main castle. The most expensive troops eat 2.4 food with a level 4 bakery, so you can fit 1250 veterans in without going into negatives. Going into -1500 production per hour (fairly easy to sustain for a few hours if you're online, using the hunter, attacking enough and maybe even getting food from alliance mates), you can get another 625 veterans.
That means that you should be able to fit 1875 strong troops into your main Great Empire castle. Food outposts (especially shiny ones), and other kingdom castles (provided you have a few food villages), should be able to sustain more.
