I have a level 6 castle and not enough food, a population of 15 and deserting armies. There are 3 farms but if a pal of mine didn't keep sending food this castle could not survive. What is going wrong?

Get as many Farmhouses as possible until it's not effective to have more. To know how much, I suggest looking at the last one you built and looking at it's occupancy rate. At your level, I suggest stopping at 23% occupancy rate.
Afterward, raise your Farmhouse levels as high as you can. At your level it's probably level 2 or 3.
Build a few decorative items to keep your Public Order high. Public Order affects the productivity rate of all your farms, woodcutters and Stone Quarries.

If you're not very active you should try to keep your food consumption lower than your food production.

If your food consumption is higher, then loot robber barons for the extra food.
