I want to be certain that I understand the resorces of an outpost, before I capture one.
When the notation is Food:6 Stone:2, does that mean that the farms built on the outpost will produce 6 food/hr, and the stone quarrys will produce 2 stone/hr?

No, that means the occupancy rate for food is 6, and the occupancy rate for stone is 2, and you can't build any wood plants. Basically, you can have 6 farmhouses at 100% production, 2 stone quarries at 100% production, and no woodcutters.
