I have heard of different types of castles like Ice Castles and Fire Castles but how do you get one?

they are level dependent. at the bottom toolbar, next to the castle icon (or globe icon, depending on where u r at) there is a tri-color icon. click on it and you will see when you get to unlock the other kingdoms.

an ice castle for example, is a castle in everwinter kingdom

There are three kingdoms in addition to the Great Empire, which is the grassy land where you start. The little icon next to the castle/globe icon is the kingdoms icon, and is greyed out until you are level 25, when you unlock the "ice" kingdom, Everwinter Glacier. At level 40, you get a "sand" kingdom, the Burning Sands. At level 50 you get the "fire" kingdom, Fire Peaks. If you want to know why you go to these kingdoms, I have the reasons you need to go to Everwinter and burning sands, but not fire peaks. I will post that when I get peaks.

You go to Everwinter to attack barbarians
You go to Burning Sands to rescue your kidnapped princess (Why do we have such bad misfortunes with the princesses? XD)
