The little bird on the fortress' name tag, which does that nobody can attack you for some time, how do i get it?
I can't remember it... Please help...

You have to buy Protection Mode from the King's Market.

Of course, when you buy protection, you can't make siege tools, attack soldiers, or attack somebody...

You actually can make soldiers and siege tools, it is just that producing / recruiting them is slowed.

I have heard that offensive soldier recruitment is painfully slowed, but what about defensive soldiers? Are they slowed quite a bit as well? Any knowledge as to how much slower?

No, defensive soldiers are not slowed or defense tools, I don't know how much slowed the attack troops are, but I heard some players saying it takes 8+ hours to build 5 heavy attackers.
