How can I choose which soldiers to keep in the castle wall for defense. All I can do is set the ratio. But is there a way where I can set the soldiers myself for defense?

Welcome to the forums, I am Jade
Before it was possible to choose, but after an update the game automatically put the best defenders available in the wall first and so on. So you cannot really choose.

the problem is, the game doesn't actually put the best defenders on the wall

The only situation when that happens is when renegades are involved.

I had read somewhere that ranged soldiers defend better against ranged attackers. Is it true?

yes it is very true and melee defenders are good against melee attackers, this are the basics of the game so everyone should know that.
