"Fields" are normally termed "castles" (unlike the castle looking building within a "castle", which is called a "keep"), which are gained by conquering outposts (either player or NPs), but you need an estate to do that, and you need to be 13th level to have an estate. Easy, right? 8|

Also, "plant" is just the nickname of a resource building (quarry, farmhouse, woodcutter), and has nothing to do with wood resources. The number of efficient plants is determined by the outposts you conquer. If an outpost has Stone 6/Food 2, that means you can build up to six quarries and two farmhouses, all at 100% production, afterwhich normal production deductions apply.
