To get more castles, you have to go to the new kingdoms

Level 25, Level 40 and level 50 unlocks them
But you can get outposts (something similar to castles) after you build an estate at level 13, and there are two upgrades more for it, at level 19 and level 31, you can have up to 3 outposts at the same time

Its simple, to get an outpost you need a castellan, to get a castellan you need a estate.
And the other kingdoms, after you have pay the resources or rubies, for unlocking it, you will have an Aditional castle

I would just play on and not worry about this. At level 13, you will receive a quest to get an estate and capture an outpost. Until then, just carry on with your single castle.

Just a random tip: Since you are level 8, I suggest that you get 3 farmhouses, 3 woodcutters and 3 stone quarries (if you haven't already) as soon as you can.

you don't "capture" an estate, you build it. you capture the outposts

To get the outposts, you just need an estate. You don't need to pay anything extra.

For the other kingdoms, the numbers vary. From memory, the everwinter glacier and burning sands costs were very little but there was a fairly substantial cost for fire peaks at around 500K resources (200K wood, same with stone and ??? food) and 200K coins.
