I started to play in the USA1 world, deleted my browsing history and couldn't get back in because I live in Australia and my computer automatically directed me to Australia1. Now GGS have sent an email to say my castle needs me and I still can't login to my original castle. Is there any way to change worlds once you have logged in?

Click logout in the top right corner, then at the bottom of the screen you can change your server.

Shadow mercenaries can, and often do, lose. You can have better defenders than their attackers, because there are only shadow mace/xbow and 2HS/heavy xbow, whereas in defense you can have veterans, renegades, kingsguard etc.

if i suppport any alliance member. while he/she is gettng attacked. i arrive in time. we won the battle, will i get some honor/glory? same question but if we loss will i get some honor /glory

No, supporting someone don't make you win honor or glory (or lose honor).

When you attack someone (or sabotage or spy or send support), where it asks you if you want to use horses, if you hover over the 6%, it shows a message that says "+6% all 10 fields." What does that mean? What are the 10 fields? Do the horses do more than make your army move faster?

No, I think they only make your army go faster. I think the 'all 10 fields' thing has something to do with the speed increase being exponentil, possibly over 10 game miles? I don't think anyone knows for sure. The important thing is that they boost your speed.
